It all began when we were going to have regular vegetarian burritos with pinto beans, rice, salsa, sour cream, guacamole and lettuce. Then things got much cooler. I chopped some bell pepper, onion, and spinach, sauteed it right quick, threw in some cumin, cilantro and lemon juice, and we had vegetarian fajitas. Zucchini or yellow squash goes well in fajitas, too.
Bonus Recipe Time!
To make guacamole, mash up some avocado, put in a healthy dose of lime juice, chopped onion and diced tomato, add a little salt and cilantro to taste, and you're done! Refrigerate, and eat within 2 days.
